Ingredients
  

Main Ingredients
  • 2 tablespoons olive oil For sautéing
  • 1/2 cup sliced onions Sauté until translucent
  • 1 tablespoon minced garlic Adds flavor
  • 1 pound lean ground beef Can substitute with ground turkey or chicken
  • 1 teaspoon cumin For seasoning
  • 1 teaspoon chili powder or chipotle powder For heat and flavor
  • 1 teaspoon salt To taste
  • 1/2 teaspoon black pepper To taste
  • 1 cup Mexican blend cheese For filling
  • 12 pieces corn tortillas Warmed before use
  • 1/4 cup chopped cilantro For garnish
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Mexican oregano
  • 1 wedge Lime For serving
Toppings
  • to taste Shredded lettuce
  • to taste Diced tomatoes
  • to taste Sour cream
  • to taste Pico de gallo
  • to taste Salsa

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pan, heat the olive oil over medium heat. Add the sliced onions and sauté until they become translucent or lightly browned, about 3-5 minutes.
  3. Toss in the minced garlic and cook for another minute until fragrant. Remove the onion mixture from the pan and set it aside.
  4. In the same pan, cook the ground beef over medium-high heat until it’s no longer pink. Drain any excess grease, then season the beef with cumin, chili powder, salt, and black pepper. Stir in the cooked onions.
  5. Take a damp tea towel or 2-3 paper towels, wring it out, and place the corn tortillas in the middle. Fold the towel over and microwave the stack on high for 30 seconds. If they aren’t warm enough, heat them for an additional 10 seconds.
  6. Working quickly, take a tortilla, add a large tablespoon of beef filling, and gently fold it in half. Place each topped tortilla back-to-back on a baking sheet to help them stay closed. Repeat this until all tortillas are filled.
Baking
  1. Bake in the oven for 15 to 20 minutes, testing for your desired crispiness.
Serving
  1. Once done, serve with lime wedges and your favorite toppings!
