Ingredients
  

Filling
  • 1 lb lean ground beef
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
Chimichanga Assembly
  • 6 large flour tortillas
  • Vegetable oil for frying Ensure oil is at the right temperature for frying.

Method
 

Preparation
  1. Heat oil in a large skillet over medium heat. Sauté diced onions until golden brown.
  2. Add minced garlic and ground beef; cook until browned, breaking it apart as it cooks.
  3. Stir in cumin, chili powder, salt, and pepper until well combined.
  4. Remove from heat and blend in shredded cheddar cheese until melted.
  5. Spoon the beef-cheese mixture onto each tortilla and roll tightly, tucking in the ends.
Frying
  1. Fry chimichangas seam-side down in hot oil until golden brown, about 3-4 minutes per side.
  2. Drain on paper towels and serve hot with salsa or guacamole.

Notes
