Ingredients
  

Vegetable Preparation
  • 2 medium zucchinis, cut into fry shapes (about 3–4 inches long, 1/2 inch thick)
Breading Mixture
  • 1 cup breadcrumbs (Panko recommended for extra crunch)
  • 1/2 cup grated Parmesan cheese (can substitute Pecorino, Asiago, or sharp cheddar)
  • 2 large eggs, whisked for coating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked for added depth)
  • Olive oil spray for lightly coating the fries before baking

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment and set a wire rack on top if you have one.
  2. Trim the ends of the zucchinis and slice each into sticks roughly 1/2-inch thick. Pat each piece dry with paper towels to remove excess moisture.
Coating
  1. In a shallow bowl, whisk the eggs until frothy.
  2. In a separate bowl, mix the breadcrumbs, grated Parmesan, garlic powder, and paprika. Stir to combine.
  3. Working in batches, dip each zucchini stick into the egg, then press into the breadcrumb mixture for an even coat. Arrange on the prepared rack or baking sheet with space between each.
Baking
  1. Lightly spray the fries with olive oil spray to encourage browning.
  2. Bake for 9–12 minutes, then flip each fry and bake another 8–10 minutes until edges are golden and crisp.
  3. Remove from oven and let rest for 2 minutes before serving.
