Ingredients
  

Cracker Base
  • 1 cup all-purpose flour
  • 3/4 cup shredded Asiago cheese Can substitute with Parmesan or Pecorino.
  • 1 tsp salt
  • 3/4 tsp coarsely ground black pepper
  • 1/3 cup butter, cubed and at room temperature
  • 1/4 cup milk Can use low-fat or whole milk.
  • 2-3 tbsp everything bagel seasoning Adjust based on preference.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, shredded Asiago cheese, salt, and coarsely ground black pepper. Give it a good stir.
  3. Add the cubed butter to the flour mixture and mix until it resembles coarse crumbs.
  4. Pour in the milk and mix until a dough forms. It’s normal for it to be a bit crumbly.
  5. Lightly flour your surface and roll out the dough to about 1/8 inch thick.
  6. Cut into shapes and sprinkle with everything bagel seasoning.
  7. Arrange the cut crackers on a baking sheet and bake for 15-20 minutes, or until they are golden brown.
  8. Let them cool completely on a wire rack before serving.

Notes

Store leftovers in an airtight container at room temperature for up to a week or freeze in a sealed freezer bag for up to 3 months after cooling completely. Chill the dough for easier handling if it's too soft while rolling. Use parchment paper on baking sheets to prevent sticking.
