- Heat the olive oil in a large pot over medium heat.
- If using Italian sausage, add it now and cook until browned.
- Add the diced onion and stir until it softens, about 3-4 minutes.
- Incorporate the minced garlic and continue cooking for an additional minute until fragrant.
- Pour in the broth and diced tomatoes, bringing the mixture to a simmer.
- Add the heavy cream and let it gently simmer.
- Stir in the ravioli and cook according to package instructions until they’re tender.
- Just before serving, fold in the fresh spinach and Italian seasoning, stirring until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot, generously topped with freshly grated Parmesan cheese.
