  • 1 tbsp olive oil For sautéing
  • 1 lb Italian sausage (optional) Can be omitted for a vegetarian version
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 14.5 oz can diced tomatoes
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version
  • 9 oz cheese ravioli Frozen ravioli can also be used
  • 2 cups fresh baby spinach
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving Freshly grated

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. If using Italian sausage, add it now and cook until browned.
  3. Add the diced onion and stir until it softens, about 3-4 minutes.
  4. Incorporate the minced garlic and continue cooking for an additional minute until fragrant.
  5. Pour in the broth and diced tomatoes, bringing the mixture to a simmer.
  6. Add the heavy cream and let it gently simmer.
  7. Stir in the ravioli and cook according to package instructions until they’re tender.
  8. Just before serving, fold in the fresh spinach and Italian seasoning, stirring until the spinach is wilted.
  9. Season with salt and pepper to taste.
  10. Serve hot, generously topped with freshly grated Parmesan cheese.
