Cooking Chicken
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown and fully cooked.
- Once done, remove the chicken from the skillet and set aside.
Preparing the Sauce
- In the same skillet, add minced garlic and chopped sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
- Pour in the heavy cream and chicken broth while scraping up the browned bits from the pan.
- Stir continuously for 2-3 minutes until the sauce thickens.
Combining Ingredients
- Stir in the fresh spinach and grated Parmesan cheese until melted and the sauce becomes creamy.
- Return the seared chicken to the skillet, spooning the sauce over each piece.
- Simmer for another 5 minutes, allowing the flavors to meld together.

Notes
For enhanced flavor, marinate the chicken in Italian herbs and olive oil for a couple of hours before cooking. Adjust the richness of the sauce by using half-and-half instead of heavy cream. You can also add sautéed mushrooms for texture. Use homemade chicken broth for fresher flavor.
