  • 8 oz pasta (fettuccine or penne)
  • 1 lb chicken breast, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach Use fresh spinach for best flavor
  • 1 cup heavy cream Can substitute with Greek yogurt for a lighter version
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken and season with salt and pepper. Cook until browned and cooked through.
  3. Add minced garlic and cherry tomatoes to the skillet, cooking until fragrant.
  4. Stir in the spinach and cook until wilted.
  5. Reduce heat, then add heavy cream and Parmesan cheese, stirring until combined and heated through.
  6. Add the cooked pasta, tossing to coat in the sauce.
  7. Garnish with fresh basil before serving.

Notes
