Main ingredients
  • 4 pieces chicken breasts thick-cut for even cooking
  • 2 tablespoons olive oil for searing the chicken
  • 1 cup heavy cream can substitute with half-and-half for a lighter version
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 2 cups spinach fresh
  • 2 cloves garlic, minced adjust according to taste
  • 1 teaspoon Italian seasoning adjust according to taste
  • Salt and pepper to taste
  • Parmesan cheese for serving

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper.
  3. Add the chicken to the skillet and sear until golden brown on both sides, approximately 6-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
Cooking
  1. In the same skillet, add minced garlic and cook until fragrant.
  2. Stir in chicken broth and scrape any browned bits from the bottom of the skillet.
  3. Add heavy cream, sun-dried tomatoes, and Italian seasoning. Bring to a simmer.
  4. Add spinach and cook until wilted.
  5. Return the chicken to the skillet and simmer until cooked through, about 5-7 minutes.
  6. Serve hot, topped with Parmesan cheese.
