Ingredients
  

Pasta and Veggies
  • 1 16-ounce package rotini pasta (or pasta of choice) Cook according to package instructions.
  • 8 ounces summer sausage, diced
  • 1 cup broccoli, chopped
  • 1/2 each red onion, minced
  • 1 cup grape tomatoes, halved
  • 1 can sliced olives, drained
  • 1 cup cubed cheddar cheese
Dressing
  • 3/4 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1/2 cup Italian dressing
  • 2 teaspoons sugar Adjust to taste.
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

Preparation
  1. Bring a large pot of water to a boil.
  2. Cook the pasta according to package instructions. Drain and let it cool for 5-10 minutes.
  3. While the pasta cooks, prep the rest of the ingredients. In a large mixing bowl, combine the sausage, broccoli, red onion, tomatoes, olives, and cheese.
  4. In a separate small bowl, mix together the mayonnaise, Italian dressing, sugar, salt, and pepper. Stir well to combine.
  5. Allow the cooked pasta to cool for about 5 minutes, then add it to the sausage mixture.
  6. Pour the dressing over the pasta mixture and stir well.
  7. Cover the salad and place it in the refrigerator for at least 30 minutes before serving.
