Ingredients

Main Ingredients
  • 8 ounces pasta (e.g., penne or fettuccine)
  • 2 tablespoons olive oil
  • 1 cup heavy cream Can substitute with half-and-half or plant-based cream.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese Nutritional yeast can be used as a dairy-free substitute.
  • to taste salt and pepper
  • to taste fresh parsley, chopped (for garnish)

Method

Cooking the Pasta
  1. Boil water in a large pot and cook the pasta according to package instructions until it reaches the perfect al dente texture. Drain and set it aside.
Making the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Toss in the chopped onions and sauté until they're translucent, about 5 minutes.
  2. Next, add the minced garlic and let it cook for an additional minute until fragrant.
  3. Pour in the heavy cream, stirring gently until it warms through.
  4. Gradually add the grated Parmesan cheese, stirring continuously until it melts into a creamy sauce. Season generously with salt and pepper.
  5. Toss the cooked pasta into the skillet, ensuring each piece is well-coated with the sauce.
  6. Finish off by garnishing with freshly chopped parsley and serve.

Notes

For best results, cook pasta in salted water and stir cheese fully into the cream for a velvety texture. Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of milk or cream.
