  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish

Instructions
 

Cooking the Soup

  • In a large pot, cook the Italian sausage over medium heat until browned.
  • Add in the onion, garlic, and Italian seasoning, and sauté until the onion is soft.
  • Pour in the chicken broth, diced tomatoes, and tomato sauce. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
  • Add in the ditalini pasta and simmer for an additional 10 minutes until the pasta is cooked.
  • Stir in the heavy cream and grated Parmesan cheese until the cheese is melted and the soup is creamy.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

For a spicier soup, you can use spicy Italian sausage instead of sweet. If you want to add more vegetables, consider adding spinach or kale in the last few minutes of cooking. Make sure to taste and adjust the seasoning before serving, as the amount of salt needed can vary.
