  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper
  • for garnish Fresh parsley

Method
 

Cooking
  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add in the onion, garlic, and Italian seasoning, and sauté until the onion is soft.
  3. Pour in the chicken broth, diced tomatoes, and tomato sauce. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add in the ditalini pasta and simmer for an additional 10 minutes until the pasta is cooked.
  5. Stir in the heavy cream and grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes
