  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • In a large pot, cook the Italian sausage over medium heat until browned.
  • Add in the onion, garlic, and Italian seasoning. Sauté until the onion is soft.
  • Pour in the chicken broth, diced tomatoes, and tomato sauce. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.

Cooking

  • Add in the ditalini pasta and simmer for an additional 10 minutes until the pasta is cooked.
  • Stir in the heavy cream and grated Parmesan cheese until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

This hearty soup pairs well with crusty bread or a fresh salad. Top it with extra Parmesan cheese and chopped parsley for added flavor and presentation. Store leftover soup in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat before serving.
