  • 1 cup orzo pasta
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1.25 cups chicken or vegetable broth
  • 0.5 cup heavy cream or substitute with half-and-half for a lighter version
  • 1 cup green peas (frozen & thawed or fresh)
  • 0.33 cup grated Parmesan cheese
  • Salt & black pepper to taste
  • 4 slices prosciutto
  • Fresh thyme or red pepper flakes (optional for garnish)

Method
 

Preparation of Prosciutto
  1. In a skillet over medium heat, add the prosciutto and cook until crispy, about 4-5 minutes. Remove from the pan and set aside.
Cooking Orzo
  1. In the same skillet, melt butter and add minced garlic. Sauté for about 1 minute until fragrant.
  2. Add the orzo, stirring to coat in the butter.
  3. Pour in the broth and bring to a simmer. Cook orzo for about 8-10 minutes, stirring occasionally, until al dente.
Making it Creamy
  1. Reduce heat to low, add heavy cream, and stir in the green peas and Parmesan. Cook for an additional 2-3 minutes.
  2. Season with salt and black pepper to taste.
Serving
  1. Plate the creamy orzo and top with the crispy prosciutto. Garnish with fresh thyme or a sprinkle of red pepper flakes if desired.

Notes
