Ingredients
  

Pasta
  • 8 oz penne pasta
Seafood
  • 1 lb large shrimp (peeled & deveined)
Cooking Ingredients
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 tsp red pepper flakes (optional)
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking the Pasta
  1. Boil penne in salted water until al dente. Drain and set aside.
Cooking the Shrimp
  1. Heat olive oil in a pan. Cook shrimp for 1–2 minutes per side until pink. Remove from pan.
Making the Sauce
  1. In the same pan, sauté garlic until fragrant. Add cream, mozzarella, Parmesan, and red pepper flakes. Stir until smooth.
Combining Ingredients
  1. Return shrimp to the pan, then toss in pasta. Stir to coat everything in the creamy sauce.
  2. Season with salt and pepper. Garnish with parsley and serve hot!

Notes

Make sure not to overcook the shrimp; they cook quickly and become rubbery if left too long. Feel free to add your favorite veggies, like spinach or cherry tomatoes, for extra nutrition. If you want a little kick, increase the red pepper flakes or add hot sauce. For a lighter version, substitute half-and-half for heavy cream and use whole wheat pasta for added fiber.
