Preparation
- Line a baking dish with parchment paper for easy removal.
- Spread the vanilla ice cream evenly in the dish, smoothing the top carefully.
- Freeze the ice cream layer for at least 1-2 hours until firm.
Chocolate Layer
- Melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals until smooth.
- If desired, mix in the powdered sugar to the melted chocolate and stir until well combined.
Assembly
- Once the ice cream is firm, pour the melted chocolate over the top and use a spatula to spread it evenly.
- Sprinkle the crushed graham crackers over the chocolate layer for a nice crunch.
- Return the baking dish to the freezer for another 2-3 hours, or until everything is completely firm.
- Slice into bars and serve chilled.
