Ingredients
  

For the ice cream layer
  • 1 pint vanilla ice cream (or flavor of your choice) You can swap vanilla for your favorite ice cream flavor.
For the chocolate topping
  • 1.5 cups chocolate chips Use dairy-free chips if needed for dietary restrictions.
  • 0.25 cup coconut oil
  • 1 tablespoon powdered sugar Optional for sweetness.
For the topping
  • 0.5 cup crushed graham crackers Optional for added crunch.

Method
 

Preparation
  1. Line a baking dish with parchment paper for easy removal.
  2. Spread the vanilla ice cream evenly in the dish, smoothing the top carefully.
  3. Freeze the ice cream layer for at least 1-2 hours until firm.
Chocolate Layer
  1. Melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals until smooth.
  2. If desired, mix in the powdered sugar to the melted chocolate and stir until well combined.
Assembly
  1. Once the ice cream is firm, pour the melted chocolate over the top and use a spatula to spread it evenly.
  2. Sprinkle the crushed graham crackers over the chocolate layer for a nice crunch.
  3. Return the baking dish to the freezer for another 2-3 hours, or until everything is completely firm.
  4. Slice into bars and serve chilled.
