- In a medium bowl, combine the chilled pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and salt.
- Use a whisk, hand mixer, or stand mixer to beat the mixture vigorously for 1 to 2 minutes until it becomes light, smooth, and slightly aerated.
- Taste the mousse and adjust sweetness or spice as desired.
- Divide the mousse into individual serving cups or bowls, cover, and refrigerate for at least 30 minutes to allow it to firm up slightly.
- Just before serving, top with a sprinkle of pumpkin pie spice, crushed pecans, or granola for an added crunch.

Notes
