  • 1 cup canned pumpkin puree, chilled Make sure it’s pure pumpkin puree, not pumpkin pie filling.
  • 1/2 cup plain Greek yogurt Use room temperature for easier blending.
  • 2 tablespoons pure maple syrup or honey Adjust to taste.
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
Optional Toppings
  • Crushed pecans For added crunch.
  • Granola Another crunchy topping option.
  • Whipped cream Optional for serving.

Method
 

Preparation
  1. In a medium bowl, combine the chilled pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and salt.
  2. Use a whisk, hand mixer, or stand mixer to beat the mixture vigorously for 1 to 2 minutes until it becomes light, smooth, and slightly aerated.
  3. Taste the mousse and adjust sweetness or spice as desired.
  4. Divide the mousse into individual serving cups or bowls, cover, and refrigerate for at least 30 minutes to allow it to firm up slightly.
  5. Just before serving, top with a sprinkle of pumpkin pie spice, crushed pecans, or granola for an added crunch.

Notes
