  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt Provides creaminess and boosts protein

  • 1/2 cup grated Parmesan cheese Add more for serving if desired
  • Salt and pepper to taste
  • 1 tablespoon olive oil For cooking the chicken

Instructions
 

Cooking Pasta

  • Cook the whole wheat pasta according to package instructions. Drain and set aside.

Cooking Chicken

  • In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through.
  • Add minced garlic to the skillet and sauté for an additional minute.

Combining Ingredients

  • Lower the heat and stir in the Greek yogurt and Parmesan cheese until well combined.
  • Add the cooked pasta to the skillet and mix until all ingredients are coated.
  • Season with salt and pepper to taste.

Serving

  • Garnish with fresh parsley if desired and serve warm.

Notes

For extra flavor, marinate the chicken in garlic and herbs prior to cooking. Store leftovers in an airtight container for up to 3 days, or freeze for 2 months.
