Ingredients
  

Main ingredients
  • 3 whole cucumbers Choose fresh, firm cucumbers for best crunch.
  • 1/2 whole red onion, thinly sliced
  • 1/4 cup fresh mint leaves, finely chopped Alternatively, use 2 teaspoons of dried mint.
Yogurt dressing
  • 1 cup yogurt, preferably Greek or whole
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method
 

Prepare the dressing
  1. In a bowl, mix the yogurt, olive oil, lemon juice, garlic, salt, and pepper. Let the dressing sit for about 20 minutes to enhance the flavors.
Prepare the cucumbers
  1. While the dressing is resting, wash the cucumbers and slice them in half lengthwise before cutting them into 3mm thick slices.
Combine and serve
  1. In a large bowl, combine the sliced cucumbers, red onion, and mint. Pour the dressing over the top and gently mix until everything is well coated.
