Method
Prepare the dressing
- In a bowl, mix the yogurt, olive oil, lemon juice, garlic, salt, and pepper. Let the dressing sit for about 20 minutes to enhance the flavors.
Prepare the cucumbers
- While the dressing is resting, wash the cucumbers and slice them in half lengthwise before cutting them into 3mm thick slices.
Combine and serve
- In a large bowl, combine the sliced cucumbers, red onion, and mint. Pour the dressing over the top and gently mix until everything is well coated.
