Dry Ingredients
  • 2/3 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 cup white sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 pinch cayenne pepper For a slight kick
Wet Ingredients
  • 420 g creamed corn
  • 420 g canned corn kernels (do not drain)
  • 2 eggs, beaten
  • 1 stick unsalted butter, melted Approximately 115g
  • 1 cup sour cream Approximately 230g
  • 2 tbsp vegetable oil

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. In a large bowl, whisk together the dry ingredients: flour, cornmeal, sugar, baking powder, salt, and cayenne pepper.
  3. In another bowl, combine the wet ingredients: creamed corn, canned corn with the liquid, beaten eggs, melted butter, sour cream, and vegetable oil.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Pour the mixture into a greased 2-2.5 quart casserole dish.
Baking
  1. Bake for 55–60 minutes (or 50 minutes in a fan-forced oven) until the casserole is set but still has a slight jiggle in the center, and the top appears a deep golden brown.
  2. Serve warm or at room temperature.

Notes
