- Heat 1 tablespoon of olive oil over medium-high heat in a large skillet.
- Combine salt, pepper, and cumin. Season the chicken breasts with the mixture.
- Sear the chicken for about 4 minutes on each side until golden brown. Remove and keep warm.
- Reduce heat to medium and add the remaining olive oil to the pan.
- Add minced onion and sauté until soft, about 4-5 minutes.
- Stir in minced garlic and sauté for another minute.
- Add the spinach, sautéing for about 2-3 minutes until wilted.
- Pour in the chicken broth and heat for 1 minute.
- Stir in cream cheese until melted, then add shredded Mozzarella until melted and combined.
- Return the chicken to the skillet, coating it with the sauce. Cover and cook on medium-low for about 10 minutes, checking that the chicken is cooked through.
