  • 5 pieces boneless skinless chicken breasts Fresh is best, thighs can be substituted.
  • 2 tablespoons olive oil Divided use.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1 teaspoon ground cumin
  • 1/2 cup onion (minced)
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach Can use frozen if thawed and drained.
  • 3/4 cup chicken broth
  • 4 oz. cream cheese (cubed) Can substitute with Greek yogurt for a lighter sauce.
  • 1 cup Mozzarella cheese (shredded) Other cheese options can be used.

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of olive oil over medium-high heat in a large skillet.
  2. Combine salt, pepper, and cumin. Season the chicken breasts with the mixture.
  3. Sear the chicken for about 4 minutes on each side until golden brown. Remove and keep warm.
  4. Reduce heat to medium and add the remaining olive oil to the pan.
  5. Add minced onion and sauté until soft, about 4-5 minutes.
  6. Stir in minced garlic and sauté for another minute.
  7. Add the spinach, sautéing for about 2-3 minutes until wilted.
  8. Pour in the chicken broth and heat for 1 minute.
  9. Stir in cream cheese until melted, then add shredded Mozzarella until melted and combined.
  10. Return the chicken to the skillet, coating it with the sauce. Cover and cook on medium-low for about 10 minutes, checking that the chicken is cooked through.
