Preparation
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the shredded chicken, softened cream cheese, chopped onion, diced carrots, diced celery, salt, and pepper. Mix until well combined.
- Roll out the refrigerated pie crusts and cut them into circles or squares, about 4-5 inches in diameter.
- Place a spoonful of the creamy chicken filling in the center of each pie crust circle.
- Fold the crust over the filling to create a pocket and seal the edges by pressing with a fork.
- Place the hand pies on a baking sheet lined with parchment paper.
- In a small bowl, beat the egg and brush it over the top of the hand pies for a golden finish.
Baking
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Let cool slightly before serving.

Notes
