Ingredients
  

Filling
  • 1 cup cooked chicken, shredded Use leftover chicken if available.
  • 4 oz cream cheese, softened Make sure it's soft for easy mixing.
  • 1/2 cup onion, finely chopped
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the crust
Other
  • 1 egg for egg wash Can substitute with melted butter for brushing.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded chicken, softened cream cheese, chopped onion, diced carrots, diced celery, salt, and pepper. Mix until well combined.
  3. Roll out the refrigerated pie crusts and cut them into circles or squares, about 4-5 inches in diameter.
  4. Place a spoonful of the creamy chicken filling in the center of each pie crust circle.
  5. Fold the crust over the filling to create a pocket and seal the edges by pressing with a fork.
  6. Place the hand pies on a baking sheet lined with parchment paper.
  7. In a small bowl, beat the egg and brush it over the top of the hand pies for a golden finish.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until golden brown.
  2. Let cool slightly before serving.

Notes
