Ingredients
  

Filling

  • 1 cup cooked chicken, shredded Use leftover chicken if available.
  • 4 oz cream cheese, softened Make sure it's soft for easy mixing.
  • 1/2 cup onion, finely chopped
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the crust

Other

  • 1 egg for egg wash Can substitute with melted butter for brushing.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine the shredded chicken, softened cream cheese, chopped onion, diced carrots, diced celery, salt, and pepper. Mix until well combined.
  • Roll out the refrigerated pie crusts and cut them into circles or squares, about 4-5 inches in diameter.
  • Place a spoonful of the creamy chicken filling in the center of each pie crust circle.
  • Fold the crust over the filling to create a pocket and seal the edges by pressing with a fork.
  • Place the hand pies on a baking sheet lined with parchment paper.
  • In a small bowl, beat the egg and brush it over the top of the hand pies for a golden finish.

Baking

  • Bake in the preheated oven for 20-25 minutes or until golden brown.
  • Let cool slightly before serving.

Notes

Store any leftover hand pies in an airtight container in the fridge for up to 3 days. You can also freeze them for up to a month. Feel free to add other ingredients like mushrooms, herbs, or spices to the filling for variation.
