  • 2 cups cooked chicken, shredded You can use rotisserie chicken or any cooked protein.
  • 2 cups fresh spinach Can be swapped with kale for a twist.
  • 1 cup cream of chicken soup Homemade version can be used for better flavor.
  • 1 cup sour cream Can substitute with Greek yogurt for a lighter option.
  • 1 cup shredded cheddar cheese Divided into two portions.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup cooked pasta Optional for added heartiness.
  • 1/2 cup breadcrumbs Optional for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, fresh spinach, cream of chicken soup, sour cream, half of the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until well blended.
  3. If desired, stir in the cooked pasta at this point.
  4. Pour the mixture into a greased casserole dish and spread it out evenly.
  5. Sprinkle the remaining cheddar cheese on top, along with breadcrumbs if using.
Baking
  1. Bake for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  2. Allow to cool for a few minutes before serving.
