Ingredients

For the Pasta
  • 12 oz spaghetti Cooked in salted water
For the Beef
  • 1.5 lbs ground beef Browned and seasoned
  • 1 tbsp olive oil For cooking the beef
  • 1.5 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper To taste
For the Sauce
  • 1 cup heavy cream
  • 3/4 cup chicken or beef broth
  • 2 oz cream cheese For creaminess
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 3/4 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes Optional for heat
  • 1 tbsp butter Optional for extra richness
For Garnish
  • Fresh parsley, chopped For garnish

Method

Cooking the Pasta
  1. Boil the spaghetti in salted water until al dente. Reserve 1/2 cup of the pasta water before draining.
Cooking the Beef
  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef, breaking it apart with a spoon, and cook until browned. Season with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Drain any excess fat.
Making the Sauce
  1. Lower the heat to medium, add minced garlic and optional butter, cooking for about 30 seconds until fragrant. Pour in broth and heavy cream, scraping the bottom to release flavors. Whisk in cream cheese until smooth.
  2. Gradually add cheddar, mozzarella, and Parmesan cheese, stirring until the sauce is creamy and thick.
Combining
  1. Toss the cooked spaghetti into the skillet, ensuring every strand is coated with the sauce. If the sauce is too thick, add a splash of reserved pasta water. Allow to simmer together for 2-3 minutes.
Serving
  1. Top with chopped parsley and an extra sprinkle of Parmesan and Cajun seasoning.

Adjust ingredients or swap out cheeses as desired. For a lighter dish, substitute Greek yogurt for half of the heavy cream.
