Method
Cooking the Pasta
- Boil the spaghetti in salted water until al dente. Reserve 1/2 cup of the pasta water before draining.
Cooking the Beef
- In a large skillet, heat the olive oil over medium-high heat. Add the ground beef, breaking it apart with a spoon, and cook until browned. Season with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Drain any excess fat.
Making the Sauce
- Lower the heat to medium, add minced garlic and optional butter, cooking for about 30 seconds until fragrant. Pour in broth and heavy cream, scraping the bottom to release flavors. Whisk in cream cheese until smooth.
- Gradually add cheddar, mozzarella, and Parmesan cheese, stirring until the sauce is creamy and thick.
Combining
- Toss the cooked spaghetti into the skillet, ensuring every strand is coated with the sauce. If the sauce is too thick, add a splash of reserved pasta water. Allow to simmer together for 2-3 minutes.
Serving
- Top with chopped parsley and an extra sprinkle of Parmesan and Cajun seasoning.
