- In a large bowl, combine the broccoli, cauliflower, carrots, corn, red onion, and cheddar cheese cubes.
- Cook the bacon until it’s crispy, crumble it, and add it to the salad bowl.
- In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey (if using), salt, and pepper until smooth.
- Pour the dressing over the vegetable and bacon mixture, then toss gently to coat all ingredients evenly.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
