Ingredients
  

Vegetables and Fruits

  • 2 cups broccoli florets, chopped
  • 2 cups cauliflower florets, chopped
  • 1/2 cup corn kernels Can use frozen corn, thawed.
  • 1/4 cup red onion, diced
  • 1/2 cup shredded carrots

Meat and Dairy

  • 1/2 cup cooked bacon, crumbled Use turkey bacon for a lighter version.
  • 1/2 cup cheddar cheese cubes Can substitute with feta or blue cheese.

Dressing

  • 1/2 cup mayonnaise Greek yogurt can be used as a substitute.
  • 2 tablespoons sour cream Can be omitted if using Greek yogurt.
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey Optional.
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the broccoli, cauliflower, carrots, corn, red onion, and cheddar cheese cubes.
  • Cook the bacon until it’s crispy, crumble it, and add it to the salad bowl.
  • In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey (if using), salt, and pepper until smooth.
  • Pour the dressing over the vegetable and bacon mixture, then toss gently to coat all ingredients evenly.
  • Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.

Notes

Serve chilled as a side dish or garnish with additional bacon bits or cheese for an extra flavor boost. Can be made a day in advance.
