Ingredients
  

Vegetables and Fruits
  • 2 cups broccoli florets, chopped
  • 2 cups cauliflower florets, chopped
  • 1/2 cup corn kernels Can use frozen corn, thawed.
  • 1/4 cup red onion, diced
  • 1/2 cup shredded carrots
Meat and Dairy
  • 1/2 cup cooked bacon, crumbled Use turkey bacon for a lighter version.
  • 1/2 cup cheddar cheese cubes Can substitute with feta or blue cheese.
Dressing
  • 1/2 cup mayonnaise Greek yogurt can be used as a substitute.
  • 2 tablespoons sour cream Can be omitted if using Greek yogurt.
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey Optional.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the broccoli, cauliflower, carrots, corn, red onion, and cheddar cheese cubes.
  2. Cook the bacon until it’s crispy, crumble it, and add it to the salad bowl.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey (if using), salt, and pepper until smooth.
  4. Pour the dressing over the vegetable and bacon mixture, then toss gently to coat all ingredients evenly.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
