  • 1 lb frozen petite peas You can use fresh peas; just blanch them beforehand.
  • 3 Tbsp unsalted butter
  • 2 Tbsp all-purpose flour
  • 1/3 cup finely diced sweet onion or shallots Shallots can be used as a substitute.
  • 2 cups half and half or light cream For a lighter version, use unsweetened almond milk.
Seasonings
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp granulated garlic or garlic powder
  • 1/4 tsp onion powder
  • 1 pinch nutmeg

Method
 

Preparation
  1. In a medium-sized saucepan, melt the unsalted butter over medium heat.
  2. Add the finely diced onions or shallots, cooking until they become translucent, about 2 minutes.
  3. Stir in the all-purpose flour until it is fully absorbed.
  4. Gradually whisk in the half and half, bringing the mixture to a gentle boil.
  5. Season with salt, black pepper, garlic powder, onion powder, and a pinch of nutmeg, stirring well.
  6. Mix in the frozen petite peas until they are well-coated with the sauce.
  7. Cook for 5-7 minutes over medium heat until the peas are tender, stirring occasionally.
  8. Serve immediately for best flavor and texture.
