  • 4 pieces chicken breasts (boneless, skinless) About 1 to 1.5 lb total
  • 8 oz cream cheese Cubed or softened (regular or reduced-fat)
  • 1 cup chicken broth Low-sodium preferred
  • 2 cloves garlic Minced
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • Salt and pepper To taste
  • Fresh parsley For garnish (optional)

Method
 

Cooking
  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with salt, pepper, and 1 teaspoon onion powder.
  3. Add the chicken to the hot skillet. Cook until browned, about 5–7 minutes per side. Transfer chicken to a plate and set aside.
  4. Add the minced garlic to the same skillet and sauté for about 1 minute, stirring so it doesn’t burn.
  5. Reduce heat to low and add the cream cheese and 1 cup chicken broth. Stir continuously until the cream cheese melts and the sauce becomes smooth and silky.
  6. Return the chicken to the skillet, spoon some sauce over the top, cover, and simmer for 10–15 minutes until the chicken reaches 165°F (74°C) and the sauce thickens.
  7. Serve hot with a sprinkle of fresh parsley if desired.

Notes
