  • 1 stick unsalted butter, melted Use good quality butter for best flavor.
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 3 bananas, mashed Use very ripe bananas for better flavor.
  • 1/2 cup chopped walnuts (optional) Optional for added crunch.
Cream Cheese Filling
  • 4 oz cream cheese, softened Softened to ensure easy blending.
  • 2 tbsp granulated sugar
  • 2 tbsp all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 loaf pan with non-stick spray.
  2. In a smaller bowl, whisk together 1 cup of flour, baking soda, and salt. Set this aside.
  3. In a larger bowl, mix together the melted butter, 3/4 cup sugar, milk, vanilla, and eggs until well combined.
  4. Mash the bananas in a separate bowl and fold them into the wet mixture.
  5. Gradually add the dry mixture to the wet ingredients, stirring until combined.
  6. For the cream cheese filling, whip together the softened cream cheese, 2 tablespoons of sugar, and 2 tablespoons of flour until smooth.
Baking
  1. Pour half of the banana bread batter into the prepared loaf pan.
  2. Dollop the cream cheese mixture over the batter, followed by the remaining banana batter.
  3. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
