Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1 cup granulated sugar plus an extra 1 cup for the cranberries
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed cold butter helps create a nice crumbly texture
For the filling
  • 3 cups fresh cranberries frozen cranberries can be substituted
  • 2 tbsp cornstarch
  • 1/4 cup water
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour, 1 cup of sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Press half of the mixture into the bottom of a greased 9x13 inch baking pan to form the crust.
  5. In a saucepan, combine the cranberries, an additional cup of sugar, cornstarch, water, and vanilla.
  6. Cook over medium heat until the mixture thickens and cranberries soften.
  7. Spread the cranberry mixture evenly over the crust in the baking pan.
  8. Sprinkle the remaining crumble mixture over the top of the cranberries.
  9. Bake for 40 minutes or until the top is golden brown.
  10. Once out of the oven, let it cool completely before cutting into bars.

Notes
