Ingredients
  

Meat
  • 4 slices slices bacon, (chopped) Can substitute with smoked turkey or pancetta.
  • 2 (12-ounce) packages kielbasa sausage, (cut into 1/2 inch slices)
  • 1.5 pounds ground beef (80/20) Can substitute with ground turkey or chicken.
Vegetables and Legumes
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 (14.5-ounce) can petite diced tomatoes (with liquid)
  • 2 (16-ounce) cans baked beans (sweeter) or ranch beans (more savory) (with liquid)
  • 1 (7-ounce) can chopped green chilies (with liquid)
  • 1 (15-ounce) can sweet corn (with liquid)
  • 2 medium russet potatoes (peeled and cut into 1/2 inch cubes) Can substitute with other root vegetables.
Spices and Thickeners
  • 3 tablespoons all-purpose flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 cup water
Garnish
  • 2 tablespoons parsley (chopped)

Method
 

Preparation
  1. Cook chopped bacon in a large pot over medium heat until brown and crispy. Remove and set aside to drain excess fat.
  2. In the pot drippings, add sliced kielbasa sausage and brown on both sides.
  3. Add ground beef, diced onion, and minced garlic to the pot. Cook until the beef is no longer pink.
  4. Sprinkle flour, salt, pepper, and chili powder over the beef mixture. Stir and cook for about a minute.
Cooking
  1. Add petite diced tomatoes, baked beans, chopped green chilies, sweet corn, russet potatoes, bacon, sausage, and water. Stir well.
  2. Bring to a boil, reduce heat and cover. Let simmer for about an hour, stirring occasionally.
  3. If the stew becomes too thick, add a bit more water as necessary.
  4. Garnish with chopped parsley before serving.

Notes
