Cowboy Spaghetti

Ingredients
  

Pasta

  • 12 oz spaghetti

Meat and Dairy

  • 6 slices bacon, chopped Cook until crispy.
  • 1 lb ground beef Can substitute with spicy sausage for extra flavor.
  • 1 1/2 cups shredded cheddar cheese Can substitute with pepper Jack for a spicier kick.

Vegetables

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions For garnish.

Canned Goods

  • 1 can diced tomatoes (15 oz)
  • 1 can tomato sauce (8 oz)

Spices

  • 1 tsp smoked paprika
  • 1 tsp chili powder Increase for a spicier dish.
  • Salt & pepper to taste

Instructions
 

Preparation

  • Cook spaghetti according to package directions; drain and set aside.
  • In a large skillet, cook bacon until crispy. Remove and set aside.

Cooking

  • In the same skillet, cook ground beef and onion until beef is browned. Drain excess fat.
  • Add garlic, tomatoes, tomato sauce, smoked paprika, chili powder, salt, and pepper. Simmer for 10 minutes.
  • Toss in the cooked spaghetti and half the cheddar cheese. Stir to combine.
  • Sprinkle the remaining cheese, cooked bacon, and green onions on top.
  • Bake at 375°F for 15 minutes, or until cheese is bubbly and golden.

Notes

Let it cool completely before storing in an airtight container in the refrigerator for 3 to 4 days. Can be frozen for up to 3 months. Thaw in the fridge before reheating.
