  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (like pecans or walnuts) Consider toasting for extra flavor.
  • 1 cup shredded coconut

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and fluffy.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually blend these dry ingredients into the wet mixture until well combined.
  5. Gently fold in the oats, chocolate chips, nuts, and shredded coconut until just mixed.
Baking
  1. Using a tablespoon, drop dollops of dough onto ungreased baking sheets, leaving space for spreading.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.
  3. Allow the cookies to cool for a few minutes on the baking tray before transferring them to wire racks to cool completely.
