Cowboy Casserole

Ingredients
  

  • - ½ pound bacon
  • - 1 pound ground beef
  • - 1 small onion chopped
  • - 2 15 ounce cans baked beans with pork
  • - ⅓ cup barbecue sauce
  • - 1 7.5 ounce package refrigerated biscuit dough

Instructions
 

  • Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite-size pieces. Set aside.
  • Add ground beef and chopped onion to the skillet, and cook until the beef is no longer pink and the onion is tender. Drain excess grease.
  • Stir in the cooked bacon, baked beans, and barbecue sauce into the ground beef mixture. Bring to a boil, then reduce heat to medium-low.
  • Place the refrigerated biscuit dough in a single layer over the top of the mixture.
  • Cover and simmer for about 10 minutes, or until the biscuits are cooked through.
  • Serve by placing two biscuits on each plate and spooning the beans over them.

Notes

- You can customize this casserole by adding shredded cheese on top of the biscuits during the last few minutes of cooking.
- Feel free to adjust the amount of barbecue sauce to suit your taste preferences.
- Leftovers can be stored in an airtight container in the refrigerator for a few days.
