Method
- Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite-size pieces. Set aside.
- Add ground beef and chopped onion to the skillet, and cook until the beef is no longer pink and the onion is tender. Drain excess grease.
- Stir in the cooked bacon, baked beans, and barbecue sauce into the ground beef mixture. Bring to a boil, then reduce heat to medium-low.
- Place the refrigerated biscuit dough in a single layer over the top of the mixture.
- Cover and simmer for about 10 minutes, or until the biscuits are cooked through.
- Serve by placing two biscuits on each plate and spooning the beans over them.
Notes
- You can customize this casserole by adding shredded cheese on top of the biscuits during the last few minutes of cooking.
