  • 1 cup cottage cheese
  • 1/2 cup pumpkin puree (unsweetened) Canned pumpkin puree works well.
  • 2 large eggs
  • 1/2 cup almond flour Can substitute with oat flour for softer texture.
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice Or a mix of cinnamon, nutmeg & ginger.
  • 1 tsp baking powder
  • pinch salt
  • 1-2 tsp honey or maple syrup Optional for sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix the cottage cheese, pumpkin puree, and eggs until well combined.
  3. In another bowl, combine the almond flour, pumpkin spice, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. If desired, add honey or maple syrup for extra sweetness.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before cutting into bars and serving.

Notes
