Preparation
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix the cottage cheese, pumpkin puree, and eggs until well combined.
- In another bowl, combine the almond flour, pumpkin spice, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If desired, add honey or maple syrup for extra sweetness.
- Pour the batter into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let cool before cutting into bars and serving.

Notes
