  • 1 full onion Chopped
  • 2 tins corned beef
  • 6-7 pieces potatoes Chopped
  • 1 piece carrot Diced (or 2-3 if preferred)
  • 2 cubes beef oxo
  • 80 ml water

Preparation

  • Chop the onion and the potatoes into small pieces. Dice the carrot as well.
  • Add all the ingredients to the slow cooker.
  • Stir everything together to mix well.

Cooking

  • Cook on high for around 5 hours. Stir occasionally to ensure even cooking.
  • Check the potatoes and carrots; they should be tender and the flavors should meld together.

Notes

To store leftover Corned Beef Hash, let it cool completely. Place it in an airtight container and keep it in the refrigerator for up to 3 days or freeze for longer storage (up to 2 months). Reheat in the microwave or on the stove. Cut the potatoes into even-sized pieces for even cooking and finish in a frying pan for a crispier texture. Feel free to add spices like garlic powder or paprika for extra flavor.
