Main ingredients
  • 4 whole whole corn cobs
  • 3 tbsp extra virgin olive oil
  • 2 tbsp parsley or coriander/cilantro, roughly chopped optional garnish
  • 1.5 tsp garlic powder
  • 2.5 tsp smoked paprika or ordinary, plus more for garnish if desired
  • 2 tsp cooking/kosher salt
  • 2 tsp black pepper
  • 50 g unsalted butter
  • 1 clove garlic, finely minced

Method

Preparation
  1. Start by cutting each corn cob into pieces that resemble ribs. Use a sharp knife and work carefully to prevent injuries.
  2. In a large bowl, combine the olive oil, garlic powder, smoked paprika, salt, and black pepper. Mix until well blended.
Cooking
  1. Preheat your air fryer.
  2. Coat each piece of corn with the seasoning mixture thoroughly, ensuring all sides are covered.
  3. Arrange the corn pieces in the air fryer basket, making sure they are not overcrowded.

Notes

Corn ribs can be served with a spicy aioli or a tangy dipping sauce. They look fantastic on a platter, garnished with fresh herbs. To store, place cooled leftovers in an airtight container in the refrigerator for up to three days and reheat in the air fryer for a few minutes.
