Delicious homemade coconut balls coated in chocolate, reminiscent of a favorite candy bar.

Ingredients
  

Main Ingredients
  • 1 can Eagle Brand Sweetened Condensed Milk No substitutes
  • 1.5 cups finely chopped/crushed pecans or almonds Optional; any crushed nut works
  • 1 pound sweetened coconut
  • 0.5 cups powdered sugar
  • 12 oz Ghirardelli melting chocolate Half white and half milk chocolate

Method
 

Preparation
  1. In a large bowl, combine the sweetened condensed milk, sweetened coconut, chopped nuts (if using), and powdered sugar.
  2. Mix until well combined.
  3. Pop the bowl in the freezer for about 10 minutes.
  4. Once slightly firm, scoop and roll the mixture into 1 to 1 ½ inch balls, and place them on a baking sheet lined with wax paper.
Dipping
  1. Melt your chocolate according to package instructions and dip each coconut ball until fully coated.
  2. Let the chocolate set on the baking sheet in the refrigerator until firm.

Notes

Feel free to omit nuts for a nut-free version. If the coconut mixture feels too sticky, use a light dusting of powdered sugar on your hands while shaping.
