Ingredients
  

For the mashed potatoes

  • 4 large large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste

For the breaded chicken

  • 2 cups cooked chicken, diced or shredded
  • 1 cup bread crumbs
  • 1/2 cup flour
  • 2 large eggs, beaten
  • Salt and pepper to taste

Additional ingredients

  • 1 cup corn (canned or frozen)
  • 1 cup gravy (store-bought or homemade)
  • 1 cup shredded cheese (cheddar or your choice)

Preparation

  • Prepare the mashed potatoes: Boil the peeled and cubed potatoes in salted water until tender. Drain and mash. Add milk, butter, salt, and pepper, mixing until creamy.
  • Bread the chicken: Set up a breading station with flour, beaten eggs, and bread crumbs. Dip each piece of chicken in flour, then in the egg, and finally coat with bread crumbs.
  • Cook the chicken: Heat oil in a skillet over medium heat and cook the breaded chicken until golden brown and cooked through, about 5-7 minutes per side. Remove from heat.
  • Assemble the bowls: In a bowl, layer mashed potatoes, followed by a layer of corn, then place the breaded chicken on top.
  • Pour gravy over the top and sprinkle with shredded cheese. Serve warm.

Notes

Make your mashed potatoes smooth and creamy for the best texture. Use leftover chicken to save time. You can also add your favorite veggies for extra flavor and nutrition.
