  • 2 lbs beef stew meat Use chuck or round cuts for best flavor
  • 4 cups beef broth Can substitute with chicken or vegetable broth
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced Use Yukon Gold or Russet potatoes
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste Adjust seasoning as preferred
  • 1 tablespoon olive oil For browning the meat

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium-high heat.
  2. Brown the beef stew meat thoroughly on all sides to lock in flavor.
  3. Transfer the browned meat into your crockpot.
  4. Add the chopped onion, minced garlic, sliced carrots, and diced potatoes to the pot.
  5. Stir in the beef broth, tomato paste, dried thyme, dried rosemary, salt, and pepper. Ensure everything is combined.
Cooking
  1. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
Serving
  1. Once ready, serve warm and enjoy!
