Colcannon Potatoes are a traditional Irish dish made with creamy mashed potatoes mixed with tender cabbage and green onions, enriched with butter, milk, and cream. This comforting side dish is perfect for St. Patrick's Day or any time you crave hearty comfort food.

Ingredients
  

  • 8 medium Yukon gold potatoes
  • 1 tablespoon salt, plus more to taste
  • 8 tablespoons butter, divided
  • 4 cups lightly packed shredded cabbage
  • 3 green onions, minced
  • 1/2 cup milk, plus more as needed
  • 1/2 cup heavy cream
Cracked pepper, to taste

Method
 

  1. Peel the potatoes and cut them into quarters.
  2. Place the potatoes in a large pot with enough water to cover them. Add 1 tablespoon of salt to the water.
  3. Bring the water to a boil and cook the potatoes until they are very tender, about 15-20 minutes.
  4. Drain the potatoes and set them aside.
  5. Return the pot to the stove along with 3 tablespoons of butter. Once the butter has melted, add the shredded cabbage to the pot and cook, stirring often, until wilted, about 5 minutes.
  6. Add the minced green onions and cook for an additional 1 minute.
  7. Return the cooked potatoes to the pot along with the milk and heavy cream. Mash the potatoes over low heat until they are smooth and creamy. Add additional milk or cream to reach your desired consistency.
  8. Season the mashed potatoes with salt and cracked pepper to taste, and serve with the remaining butter.
