  • 2 tablespoons butter
  • 2 cups diced tomatoes
  • 1 piece lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a pan over medium heat, melt the butter.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in diced tomatoes and lemon juice, and cook for 5-7 minutes.
  4. Season the cod fillets with salt and pepper, then place them in the pan.
  5. Spoon the sauce over the cod and let cook for 6-8 minutes, or until the fish is cooked through and flakes easily.
  6. Add lemon zest before serving and garnish with fresh parsley.
