  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded coconut, almond flour, sugar, and salt in a mixing bowl.
  3. Cream together the softened butter, egg, and vanilla extract in another bowl until smooth.
  4. Mix the wet ingredients into the dry mixture until everything is well combined.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes, or until the edges are golden brown.
  2. Cool the cookies on a wire rack before serving.
