Main Ingredients

  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 1 lb ground beef (or sausage) Can substitute with ground turkey or beans for a vegetarian option.
  • 1 package cream cheese (8 oz)
  • 2 cups shredded cheddar cheese Can use other cheeses like pepper jack or mozzarella.
  • 1 tsp chili powder Optional for extra flavor.

Preparation

  • In a skillet over medium heat, cook the ground beef (or sausage) until browned. Drain excess fat.
  • In a crockpot or a large saucepan, combine the cooked meat, Rotel tomatoes, and cream cheese. Stir until the cream cheese is melted and everything is combined.
  • Add the shredded cheddar cheese and chili powder (if using). Stir until the cheese is fully melted and the dip is creamy.

Serving

  • Serve warm with tortilla chips, crackers, or vegetables for dipping.

Notes

Store any leftovers in an airtight container in the fridge for about 3 to 4 days. Reheat in the microwave or on the stove until hot.
