  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 1 lb ground beef (or sausage) Can substitute with ground turkey or beans for a vegetarian option.
  • 1 package cream cheese (8 oz)
  • 2 cups shredded cheddar cheese Can use other cheeses like pepper jack or mozzarella.
  • 1 tsp chili powder Optional for extra flavor.

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef (or sausage) until browned. Drain excess fat.
  2. In a crockpot or a large saucepan, combine the cooked meat, Rotel tomatoes, and cream cheese. Stir until the cream cheese is melted and everything is combined.
  3. Add the shredded cheddar cheese and chili powder (if using). Stir until the cheese is fully melted and the dip is creamy.
Serving
  1. Serve warm with tortilla chips, crackers, or vegetables for dipping.
