Preparation
- Preheat the oven to 175°C and lightly coat a mini muffin tin with nonstick cooking spray.
- In a medium mixing bowl, combine flour, baking powder, kosher salt, and ground cinnamon, whisking to mix well.
- In another bowl, whisk together melted unsalted butter and granulated sugar until smooth.
- Add the egg, vanilla extract, and applesauce to the mixture, and mix until blended.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Fold in the finely diced apples without overmixing.
- Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
Baking
- Bake for 12 to 15 minutes or until a toothpick inserted in the center comes out clean.
Glazing
- While the fritter bites cool slightly, whisk powdered sugar and apple cider together in a bowl until you get a smooth, slightly thick glaze.
- Dip each warm apple fritter bite into the glaze, letting the excess drip off.
- Place the glazed bites on a wire rack to set the coating.

Notes
