Preparation
- Preheat your oven to 350°F (175°C) and spray a mini muffin tin with nonstick cooking spray.
- In a mixing bowl, combine the all-purpose flour, baking powder, salt, and ground cinnamon.
- In another bowl, mix together the melted butter, granulated sugar, egg, vanilla extract, and applesauce until well combined.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Fold in the finely diced apples.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- While the fritters are baking, prepare the glaze by whisking together the powdered sugar and apple cider or juice in a bowl until smooth.
- Once the fritters are done baking, let them cool slightly before dipping them in the glaze.
