  • 2 teaspoons ground cinnamon
  • 60 grams unsalted butter, melted
  • 50 grams granulated sugar
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 120 milliliters unsweetened applesauce
  • 1.5 cups finely diced Honeycrisp or Gala apples (approximately 2 medium apples)
For the Glaze
  • 240 grams powdered sugar
  • 100 milliliters apple cider or apple juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and spray a mini muffin tin with nonstick cooking spray.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, salt, and ground cinnamon.
  3. In another bowl, mix together the melted butter, granulated sugar, egg, vanilla extract, and applesauce until well combined.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Fold in the finely diced apples.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
Glazing
  1. While the fritters are baking, prepare the glaze by whisking together the powdered sugar and apple cider or juice in a bowl until smooth.
  2. Once the fritters are done baking, let them cool slightly before dipping them in the glaze.
