Ingredients
  

For the custard
  • 4 large large eggs
  • 1 cup milk (or half-and-half) Feel free to substitute half-and-half for milk for a creamier texture.
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
For cooking
  • 2 tablespoons butter For cooking the bites.
For the bread
  • 1 loaf brioche or challah bread, cut into 1-inch cubes Quality matters; brioche or challah adds rich flavor and texture.
For the cinnamon sugar coating
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon For coating.

Method
 

Preparation
  1. In a medium bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
  2. Add in the bread cubes, gently tossing to coat—be careful not to let them soak too long, as you want them to hold their shape.
Cooking
  1. Heat the butter in a large nonstick skillet over medium heat.
  2. In batches, add the coated bread cubes and cook, turning often, until each side is golden brown, which should take about 5 to 7 minutes.
Coating
  1. In a shallow bowl, combine the sugar and cinnamon for coating.
  2. Roll the warm French toast bites in the cinnamon sugar mixture until evenly coated.
Serving
  1. Serve immediately with your choice of maple syrup, honey, or a dusting of powdered sugar.
