Ingredients

For the marinade
  • 2 cloves garlic (minced)
  • 1 lime lime (juiced and zested)
  • 1/3 cup olive oil
  • 1/4 cup cilantro (chopped)
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For the chicken
  • 4 pieces chicken breasts

Method

Marinating
  1. In a marinating dish or resealable gallon bag, mix together the minced garlic, lime juice, lime zest, olive oil, cilantro, chili powder, smoked paprika, cumin, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Marinate for at least 20 minutes, or up to 2 hours for more flavor.
Grilling
  1. Preheat your grill to medium heat.
  2. Place the marinated chicken breasts on the grill, cooking them for 7-8 minutes on each side, until they reach an internal temperature of 165°F.
  3. Remove from the grill and let rest for a few minutes before serving.

Notes

For optimal flavor, marinate the chicken for at least 20 minutes and let it rest after grilling to redistribute the juices. Consider adding honey or agave for added sweetness in the marinade.
