Crust
  • 2 cups sugar cookie crumbs (about 16 cookies, crushed)
  • 1/2 cup unsalted butter, melted
Cheesecake Filling
  • 16 oz cream cheese, softened Ensure it is at room temperature for smooth mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream Keep bowl and beaters cold for best results.
  • 1/4 cup granulated sugar
  • 1 cup sugar cookie pieces, chopped
  • Red and green sprinkles for decoration Use for topping.

Method
 

Preparation
  1. Combine the sugar cookie crumbs with melted butter in a medium bowl.
  2. Press this mixture firmly into the bottom of a greased 9x9 inch baking dish to create the crust. Chill it in the refrigerator for 15 minutes.
  3. In a large mixing bowl, beat the softened cream cheese until smooth.
  4. Gradually add in the powdered sugar and vanilla extract, continuing to beat until well incorporated.
  5. In a separate bowl, whip the heavy cream with granulated sugar until stiff peaks form.
  6. Carefully fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  7. Fold in the chopped sugar cookie pieces.
  8. Spread the cheesecake mixture evenly over the chilled crust.
  9. Decorate the top with red and green sprinkles.
  10. Refrigerate the bars for at least 4 hours or overnight until firm.
  11. Once ready, cut into squares and enjoy chilled.
