Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.

  4. Fold in the finely chopped maraschino cherries and, if desired, the mini chocolate chips.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Flatten each cookie slightly with the back of a fork or your fingers for an even bake.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
